Cook This, Not That

I LOVE THIS BOOK!!

When we used to eat out, Travis got us the book, "Eat This, Not That", it tells you how many calories are in the restaurant foods and what is the best choice to eat at each retaurant. It really opened our eyes. What we ate while out and about on a Saturday at Sonic and Captain D's would total up anywhere from 2700-3300 Calories (CRAZY!!!)  No wonder we weren't losing weight while hitting the treadmill and attempting to work out. Anyway, we got the "Cook This, Not That" book and every recipe in that book is our favorite. Everytime I make something Travis and I both say it is our favorite meal yet. Tonight I made the Chicken Fajitas- So yummy. I decided to share the recipe but as I may have said in past post, you HAVE got to buy youself this book!

You'll Need:
1/2 cup orange juice
2 Tbsp chipotle pepper
Juice of 1 lime- (You will miss out if you dont add the lime juice)
1 tsp ground cumin
salt and pepper to taste
1 lb boneless,skinless chicken breast
1 Tbsp canola oil
1 sliced red bell pepper
1 sliced green bell pepper
2 sliced onions
8 flour tortillas (warmed)

(Can also add 1 cup shredded cheese)

How to make it:

*Combine the Orange Juice, Chipotle Pepper, Lime Juice, Ground Cumin, Salt, Pepper in sealable plastic bag. Add the chicken and marinate for about an hour.

*preheat grill or stovetop grill pan until hot. Remove chicken from marinade and discard what is left in the bag. Grill the chicken for about 5 minutes per side, until lightly charred and cooked all the way through. Let rest 5 minutes before slicing.

*While the chicken cooks, heat the oil in a cast iron skillet over high heat. Cook the bell peppers and onions until charred and carmelized on the outside, about 10 minutes. Season with salt and pepper.

*Slice the chicken into thin pieces. combine with peppers and onions.  Serve with warm tortillas. Feel free to add cheese.

*We had Refried Beans on the side and chips and salsa.
